For the Tortillas Chiorizo, first wash the tomatoes and cut into rough cubes.
Peel the onions and cut into rings.
Wash the jalapeños, remove the seeds and cut into rings.
Preheat the oven to 160 °C convection oven.
Cut the chorizo into thin slices and fry without fat in a non-stick pan for about 2 minutes per side.
Place the tortillas in a baking dish. Spread tomatoes, onions, chorizo, jalapeños and hot cheese dip on top, sprinkle with cheese and bake for 8-10 minutes.
Arrange tortillas chiorizo on four plates and serve.

Instead of Emmental, Manchego cheese also goes very well with the tortillas Chiorizo.
