For the chicken curry, cook the basmati rice according to the package instructions.

Peel and chop the carrots. Finely chop the leek. Cut the chicken into thin strips.

Heat the oil and fry the leeks and carrots briefly until hot. Add the chicken and also fry it hot all around.

Add coconut milk, curry powder and soy sauce and mix well. Season with salt and pepper and serve the chicken curry with basmati rice.

Finish the chicken curry with fresh coriander.
