Fry the meat in hot clarified butter until light brown on one side, turn it over and cover each with a slice of ham cut in half (quartered in the case of the fillet) and sprinkle with the cheese.
Add the Marsala and make a little bit, add the sage leaves and pour the whipped cream. Make everything for about 5 minutes, until you get a creamy sauce.
Season with salt and pepper and serve the Saltimbocca with a lot of sauce.
Tip Serve with broccoli and ciabatta bread.
Tip: It is best to use your favorite ham – then your dish tastes twice as good!
