Mix the radicchio and cabbage. Prepare a salad dressing with vinegar, oil, salt, pepper and a pinch of sugar, mix with the cabbage and radicchio strips.
Season the celery slices with salt and pepper and roast them in olive oil for about 3 minutes. Arrange the celery slices on 4 plates in a circle and sprinkle with the thyme.
Form the cabbage-radiccio-leaf salad in the middle and bring to the table on the spot.
