Finely dice the onion. Clean broccoli, cut into roses. Sauté onion and broccoli in hot oil. Season with salt and pepper. Add clear soup and cook for 10 minutes. Remove some broccoli roses with a skimmer. Blend the rest of the broccoli in the clear soup with a hand blender. Fold in crème fraîche and perhaps season with salt and pepper. Add braccoli roses one more time. Divide evenly between two soup plates and sprinkle with the croutinos. For four people, simply double the ingredients.
